Vincent’s Chocolate Crackles

This man is one of the cheekiest fellows I have ever met. Ever.

He is hilariously quick witted, as sharp as a tack and his jokes fly at you at a million miles an hour.

At 91, he unapologetically enjoys a beer in the afternoon, a good bet at the races and prioritises cooking rice for the chickens and birds that have taken up residence on his deck. He’s an all round top bloke.

He is also my grandfather.


Chocolate Crackle Recipe

Needless to say, I was very happy when Pop chose Chocolate Crackles for me to feature. They just hit that spot when you want a crunch of nostalgia and a healthy dose of chocolate. At kids parties, they have you balancing between wanting to be a respectable, healthy-eating adult and hovering around the food table trying to sneak a crackle off a pink plastic plate. Everyone loves a chocolate crackle and Vince’s crackles are crackliest ones I have ever sneaked.

Ingredients

  • 250g copha 

  • 4 cups rice bubbles

  • 1 cup icing sugar

  • 1/3 cup cocoa

  • 1 cup desiccated coconut 

Directions 

  • Melt copha in a saucepan. Allow to cool slightly. 

  • Combine the rice bubbles, sifted sugar, and cocoa with the coconut in a large bowl. Stir in copha and mix well. Spoon mixture into patty pan cases and refrigerate until firm. Make it stand out
