Maj-lis’s lemon pudding
Ingredients:
¾ cup sugar
1 tablespoon butter
2 eggs
2 tablespoons plain flour
1 cup milk
Juice and rind of 1 lemon
Method
Cream butter and sugar.
Separate white from eggs. Add yolks to mixture and flour
Add milk, lemon juice and rind. Fold in (stiffly) beaten whites of egg.
Stand in dish of water (cold) and bake in moderate oven 30-45 minutes
