Maj-lis’s lemon pudding

 
 

Ingredients:

  • ¾ cup sugar

  • 1 tablespoon butter

  • 2 eggs

  • 2 tablespoons plain flour

  • 1 cup milk

  • Juice and rind of 1 lemon

Method

  • Cream butter and sugar.

  • Separate white from eggs. Add yolks to mixture and flour

  • Add milk, lemon juice and rind. Fold in (stiffly) beaten whites of egg.

  • Stand in dish of water (cold) and bake in moderate oven 30-45 minutes
